Special Kay Bars

This is the first time we tried Special Kay Bars and they were a hit! The family loved them.

1 cup brown sugar
1/2 cup granulated sugar
1 1/2 cups corn syrup
1 1/2 cups peanut butter
6 cups Special K crisp rice cereal
12 oz pkg semisweet chocolate chips
1/3 cup peanut butter

In a large microwave bowl combine sugars and corn syrup and mix well. Microwave on high for 2 minutes. Remove bowl from microwave and stir mixture. Put bowl back into microwave for another 2 minutes (when I made this I only needed another minute) or until mixture begins to bubble and boil. Remove from microwave and add 1 1/2 cups peanut butter. Stir till mixture is smooth. Add cereal and stir till cereal is coated. Pour and press into greased 13 X 9 pan.

Combine Chocolate chips and 1/3 cup peanut butter in a small microwave safe bowl. Heat in microwave for 1 minute take out and stir, return to microwave for 30 seconds take out and stir again. If you can't stir mixture till smooth return to microwave for 30 seconds. Pour Chocolate mixture over cereal mixture. Let cool and cut into bars. If the chocolate does not set up put in the refrigerator for 10 min.

This is a very easy and fast recipe.  This would be great for any get together. This is also a great recipe for the kids to make.
